Nutritional Yeast

Nutritional yeast is a tiny yeast cell called "Saccharomyces cerevisiae," that is proliferated in a special process. This process uses blackstrap mollases as the food for the yeast. The yeast eats the molassas and concentrates the nutrients of this food inside of its own cells. Nutritional yeast can also be grown on other mineral rich carbohydrates such as honey and sugar beets.

Nutritional Yeast should be labeled "primary grown." This means that it was specifically grown for nutritional use and has a good flavor and aroma. Bulk variety nutritional yeast may not be high quality and often contains added synthetic B vitamins which may lower the price of the yeast.

As a superfood, nutritional yeast is one of the best vegetarian sources of protein. It contain 16 amino acids and is 45-52% protein by weight. It is highly concentrated in B vitamins and Chromium. It contains Potassium, Calcium, Manganese, and Copper and small amounts of 10 other minerals.

Be aware that Nutritional yeast is different than live bakers yeast, which can be harmful to some people. Any type of yeast or products that contain yeast are not recommended for people that have yeast disorders, such as Candida albicans.

Nutritional yeast is known for its energy and immune system enhancing properties. It has been used with beneficial results for eczema, nervousness, fatigue, heart disorders, and when taken with radiation treatment it helps to combat side effects.
